For the Dough:
• 250g all-purpose flour
• 2 tsp active dry yeast
• 50g granulated sugar
• ½ tsp salt
• 125ml warm milk (about 1/2 cup)
• 1 large egg, lightly beaten
• 30g unsalted butter, melted
• 50g mixed dried fruit (such as raisins, currants, or sultanas)
• ¼ tsp ground cinnamon (optional)
• Zest of 1 orange (optional)
For the Cross Topping:
• 50g icing (powdered) sugar
• 1–2 tsp water (or orange juice)
1. Activate the Yeast:
In a small bowl, combine the warm milk with a pinch of the granulated sugar and the yeast. Let sit for 5–10 minutes until frothy.
2. Make the Dough:
In a large bowl, whisk together the flour, remaining sugar, salt, cinnamon (if using), and orange zest.
Add the beaten egg, melted butter, and the frothy milk mixture. Stir until a dough begins to form, then fold in the mixed dried fruit.
3. Knead and Rise:
Turn the dough onto a lightly floured surface and knead for about 8–10 minutes until smooth and elastic.
Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm spot for approximately 1 hour or until doubled in size.
4. Shape the Buns:
Gently punch down the risen dough and divide it into 6 equal pieces. Shape each piece into a bun and place them on a baking tray lined with parchment paper.
Cover the buns with a clean kitchen towel and let them proof for another 30 minutes.
5. Bake:
Preheat your oven to 190°C (375°F).
Bake the buns in the preheated oven for about 20 minutes or until they turn a beautiful golden brown.
5. Decorate:
In a small bowl, mix the icing sugar with just enough water (or orange juice) to make a thick, drizzle-able glaze.
While the buns are still warm, use a piping bag or spoon to drizzle the glaze into a cross pattern over each bun.
